CHICKEN BREASTS STUFFED WITH CRABMEAT, SPINACH ANd CHEESE

4 chicken breasts
1/2 lb Jumbo lump crabmeat
2 garlic cloves chopped
8 oz fresh baby spinach
1/2 cup Asiago cheese
4 oz Boursin cheese
Chopped herbs parsley, rosemary, thyme
Olive oil
Salt & pepper to taste

In large saute pan heat olive oil until hot then add 1 tbsp chopped garlic. Cook until golden then add fresh spinach. Cook until soft. Add cheeses, lump crabmeat, salt and pepper. Then chill.

Take 4 chicken breast and pound with meat hammer, season. Add spinach mixture and roll up. Bake at 375 for about 45 minutes or until done. Serves 4
