CHICKEN AND SAUSAGE SKILLET

1 (16 oz) pkg Cajun sausage, sliced
1 medium onion and green bell pepper, chopped
1 tbsp oil
2 cloves garlic, minced
1 (14 oz) can chicken broth
2 cups shredded cooked chicken
1 cup uncooked long-grain rice
1 1/2 tsp Cajun seasoning
2 (20 oz) cans diced tomatoes and green chilies, undrained
1/3 cup chopped fresh parsley

Saute first 3 ingredients in hot oil in a large skillet, over medium heat 10 minutes or until vegetables are tender. Add garlic, and cook, stirring constantly, 30 seconds. Add broth and chicken; bring to a boil. Stir in rice and Cajun seasoning; reduce heat to low, cover, and cook, stirring occasionally 25 minutes. Stir in tomatoes; cook, uncovered, 10 minutes, stirring occasionally. Remove from heat and stir in parsley. Serves 6
