CHICKEN AND POTATO SKILLET DINNER

1/2 cup milk or half-and-half
4 cups frozen O’Brien hash brown potatoes, thawed
1 cup cheddar cheese, shredded
2 tsp flour
1 cup chopped onions
1 tbsp instant chicken bouillon granules
1 green or red pepper, coarsely chopped
1/4 tsp pepper
2 tbsp butter
2 cups cooked chicken or turkey

Melt butter in a skillet over medium heat. Add potatoes, onions and pepper; cook about 8 minutes or until vegetables are tender, stirring frequently. Sprinkle with flour; cook and stir 1 minute. Add chicken, milk, bouillon and pepper; simmer, uncovered, about 10 minutes or until mixture is thickened, stirring frequently. Sprinkle with cheese; let stand 3-4 minutes or until cheese is melted. Serves 4-6
