CHEESY CHICKEN NUGGETS

4 boneless, skinless chicken breasts, cut into 2 inch cubes
1 cup bread crumbs
1/4 cup grated parmesan and Romano cheeses
1 tsp garlic powder and oregano
3/4 cup buttermilk
2 tbsp butter
3 tbsp vegetable oil
1/2 tsp salt and pepper

Combine bread crumbs with spices and cheeses; mix well. In another bowl, submerge chicken in buttermilk; let stand 10 minutes. Coat chicken in bread crumb mixture. Place on a plate-lined with paper towels; set stand 5 minutes.

In a large skillet, heat butter and oil over medium heat. Cook chicken in batches until meat is cooked through and juices run clear and meat is no longer pink. Add more oil and butter if necessary. Transfer to a paper-lined plate to drain. Serve immediately.
