ROASTED VEGETABLE SKEWERS

1 red onion, cut into wedges
1 green bell pepper, cut into 1 inch squares
2 yellow squash, cut into 1/2 inch disks
16 button mushrooms
1/4 cup olive oil
Salt and pepper
Preheat oven to 450. Place two pieces of each vegetable on skewers, alternating as desired. Make sure there are small spaces between each vegetable to allow for heat circulation. Brush each assembled skewer with oil and season lightly with salt and pepper. Roast for 10 minutes, then flip and cook on other side for 5-10 minutes, until lightly browned and tender.
