ARTICHOKE CASSEROLE

Category: Artichokes

1 onion, chopped
1-2 cloves garlic, minced
1/4 cup chopped parsley
2-3 tbsp olive oil
6 eggs, slightly beaten
3 boxes frozen artichokes, cooked as directed, chopped
2 slices white bread, crumbled in 1/2 cup milk
1/4 tsp salt and pepper
1 tsp Italian seasoning
Garnish: Paprika

Saute first 3 ingredients in oil until onion is tender. Add to slightly beaten eggs. Add remaining ingredients and pour into a 13x9 inch baking dish. Sprinkle with paprika. Bake 30 minutes at 350. Cut into squares.
