HERBED MOZZARELLA EGGPLANT

1/3 cup vegetable oil
2 tsp dried oregano
2 tbsp lemon juice
1 tsp salt
2 cloves garlic, crushed
2 medium eggplants, about 2 1/2 lbs
1 cup shredded mozzarella cheese

Brush grill rack with vegetable oil. Heat coals for direct heat. Mix ingredients except eggplants and cheese. Cut eggplants into 1 1/2 inch slices and dip into oil mixture, coating both sides. Cover and grill eggplant slices 5-6 inch from medium heat for 8-12 minutes. Turn and brush 2-3 times with oil mixture, until tender. Top slices with cheese for the last 2 minutes of grilling. Serves 8
