CREAMY SWISS SPINACH BAKE

5 tbsp butter
3 cups corn flakes, crushed to 1 1/2 cups, divided
2 tbsp flour
1/4 tsp salt and pepper
3 tbsp chopped onion
1 1/4 cups milk
1 cup shredded Swiss cheese
1 (10 oz) pkg chopped frozen spinach, thawed and squeezed dry
2 eggs
In a large saucepan, melt butter over low heat. Remove 2 tbsp and mix with 3/4 cup cereal for topping; set aside. To remaining butter in pan, stir in flour, salt and onion. Cook and stir for 1 minutes. Gradually add milk, stirring constantly until smooth.
Increase heat to medium and cook until mixture boils, stirring constantly. Remove from heat and add cheese, stirring until melted. Stir in spinach, eggs and 3/4 cup cereal. Spread mixture into a 1-quart casserole dish. Sprinkle cereal mixture on top of spinach mixture. Bake at 350 for 25 minutes or until thoroughly heated through.
