SPINACH MUSHROOM SQUARES

1 cup finely chopped onions
1/4 lb thinly sliced button mushrooms
2 tbsp butter
4 eggs
2 (10 oz) pkg chopped frozen spinach, thawed and squeezed dry
1/4 cup breadcrumbs
1 can cream of mushroom soup
1/3 cup grated Parmesan cheese
1/2 tsp each salt and dried basil, crumbled
1/4 tsp nutmeg
1/8 tsp pepper

Cook onions and mushrooms in butter in skillet, stirring occasionally, until soft. Let cool. Beat eggs in a large bowl, until frothy.

Stir in cooled onions and mushrooms, spinach, bread crumbs, soup, 2 tbsp of Parmesan cheese, salt, pepper, basil and nutmeg until well combined.

Spread this mixture in a 9 inch square baking dish. Sprinkle remainder of Parmesan cheese evenly over the top. Bake at 350 for 30 minutes.
