VEGETABLE STIR FRY

2 tbsp canola oil
1 cup thinly sliced onions
1/2 cup chopped red bell pepper
3 to 4 cloves minced garlic
1/2 tbsp grated fresh ginger
1 lb coarsely chopped bok choy
1/2 lb sliced mushrooms
2 tbsp fresh lemon juice
1 tbsp soy sauce
1 tsp sugar
Heat canola oil in a large heavy skillet or wok over medium-high heat. Add onions, pepper, garlic and ginger. Stir-fry for about 1 minute. Add bok choy and mushrooms and stir-fry for about 1 minute. Add lemon juice, soy sauce and sugar. Stir-fry for about 2 to 3 minutes, until vegetables are crisp-tender.
