1 1/2 cups uncooked converted long-grain rice
3/4 cup chopped onion
2 cloves garlic, minced
2 (14 oz) cans reduced-sodium chicken broth
1/3 cup water
3/4 tsp Italian seasoning
1/2 tsp dried basil
1/2 cup frozen peas
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts (optional)

Combine rice, onion and garlic in crock pot. Bring broth and water to a boil in small saucepan. Stir broth mixture, Italian seasoning and basil into rice mixture in slow cooker. Cover; cook on LOW 2 to 3 hours or until liquid is absorbed. Add peas. Cover; cook on LOW 1 hour. Stir in cheese. Sprinkle with pine nuts.
