STRAWBERRY CAKE

1 (3 oz) pkg strawberry gelatin
1/2 cup cold water
1 pkg white cake mix
4 eggs
1 cup oil
3 tbsp flour
1 (10 oz) pkg frozen strawberries, thawed and divided
6 tbsp butter, softened
2 cups confectioners sugar

Preheat oven to 325. Grease and flour 3 (9 inch) round cake pans or a 13x9 inch baking dish. Dissolve gelatin in cold water. In a large mixing bowl, combine dissolved gelatin with the next 4 ingredients and half the strawberries. Beat 5 minutes. Pour batter into prepared cake pans. Bake for 30-35 minutes. Cool in pan on wire racks.

Cream together butter, confectioners sugar and remaining strawberries in mixing bowl until light and fluffy, addition additional confectioners’ sugar if needs for desired consistency. Spread the cake with the frosting. Note: A cream cheese frosting mixed in with the strawberries is also very good!
