APPLE CAKE WITH HOT BUTTER SAUCE

Cake
21/2 cups sifted flour
2 tsp baking soda
1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
31/2 cups peeled, cored, and diced apples
1/2 cup soft butter or shortening
1 1/2 cups sugar
2 eggs

Hot Butter Sauce
1/2 cup butter
1 tbsp flour
1/2 cup brown sugar
1/2 cup sugar
1/2 cup cream
1 tsp rum

In a large bowl, combine flour, baking soda, salt, nutmeg and cinnamon. Add apples.

In a separate bowl, cream butter and sugar well; beat in eggs. Add butter-and-sugar mixture to flour-and-apple mixture, stirring until flour is just moistened; do not over-mix. Pour batter into a greased 9 inch square pan and bake at 350 for 40 to 45 minutes, or until a wooden pick inserted in the centre comes out clean. Allow cake to cool in pan.

To make sauce: In a small saucepan, melt the butter. Gradually stir in flour and sugars. Stir in cream. Cook over medium heat, stirring constantly, until smooth and thick. Stir in rum. When cake is cool, turn out and serve with hot sauce on the side.
