Corned Beef

1 (4 lb) corned beef brisket
1 small onion, peeled, studed with 4 cloves
1 clove garlic, peeled and crushed
1 tbsp pepper
1 tsp dry mustard
2 bay leaves
Horseradish, garnish
Place brisket in a heavy pot and cover with cole water. Add next 5 ingredients and slowly bring to a boil. Reduce heat, cover and simmer gently for 3 hours or until beef is tender. Drain and dry brisket. (This can be done 1 day ahead and refrigerated covered.)
Place the brisket in a foil pan, fat side up. Position pan in center of cooking grated and cook about 40-45 minutes to warm through. Serve with horseradish.
