SHRIMP SCAMPI

Category: Grilled Starters

1/4 cup olive oil
1/4 cup lemon juice
3 tbsp chopped fresh parsley
1 tbsp minced garlic
Ground black pepper to taste
1/4 tsp crushed red pepper
1 1/2 lb raw, cleaned, shelled shrimp

In a plastic or glass bowl, combine olive oil, lemon juice, parsley, garlic, black pepper and crushed red pepper. Stir in shrimp and marinate for 20-30 minutes.

Preheat grill. Remove shrimp from marinade, and thread onto skewers. Grill for about 2 to 3 minutes on each side, or until done. Makes 6 servings.
