CHEESE GLAZED SHRIMP

10-24 shrimp, cleaned, shelled and butterflied
1 cup butter
1/2 cup honey
2 tsp apple cider vinegar
2 tsp extra virgin olive oil
8 oz Monterey Jack cheese
Salt - to taste
Fresh ground black pepper - to taste
Skewers
After melting butter, whisk in honey and vinegar thoroughly. In a plastic bag, combine shrimp with honey-butter-vinegar mix and let marinate 10 minutes. Remove and place cheese (cut into long thin slices lengthwise in crack of shrimp. Close shrimp around cheese and secure with 2 skewers - one at top and one at bottom of shrimp. Grill shrimp with lid down until cheese begins to melt and shrimp begins to brown. Serve immediately.
