SPINACH SALAD WITH SOUR CREAM DRESSING

6 to 8 cups raw spinach, washed and drained
1 (11 oz) can mandarin oranges, chilled and drained
1 medium cucumber, sliced
1 cup shredded sharp cheddar cheese
3/4 cup sour cream
6 tbsp creamy French dressing
1/8 tsp salt
Dash of pepper

Tear cleaned spinach into small pieces and place in large salad bowl. Add orange sections, cucumber slices and shredded cheese, set aside. Blend Sour Cream, French dressing and seasonings. Pour mixture over greens and toss lightly. Serves 6
