PROSCIUTTO-CHEESE COCKTAIL PINWHEELS

Preheat oven to 350. Unfold thawed pastry sheet on a lightly floured surface. Roll into a 10x14-inch rectangle. Use a pastry brush or your fingers to lightly cover the surface of the dough with Dijon-style mustard. Place 8 to 10 very thin slices of prosciutto over the pastry (just enough to cover the entire surface). Top with 1 cup finely shredded Gruyere cheese. Starting with one of the short sides, roll into a log, jellyroll style. Sprinkle water on the finishing edge and press down with your fingers to seal.

At this point, the roll may be wrapped tightly in plastic wrap, placed in a zip-top plastic bag and frozen until baking time. Logs do not need to be defrosted before they are cut and baked. Using a serrated knife, cut the roll into 1/2 -inch circles. Place circles 1 1/2 inches apart on a parchment paper-lined baking sheet, and bake 10 to 15 minutes until puffed and golden.
