Unfold thawed pastry sheet on a lightly floured surface. Roll into a 10x14-inch rectangle. Use a pastry brush or your fingers to lightly cover the surface of the dough with Dijon-style mustard. Place 8 to 10 very thin slices of prosciutto over the pastry (just enough to cover the entire surface). Top with 1 cup finely shredded Gruyere cheese. Starting with one of the short sides, roll into a log, jellyroll style. Sprinkle water on the finishing edge and press down with your fingers to seal.
