PENNE WITH SAUSAGE AND SPICY VODKA TOMATO CREAM SAUCE

1 (16 oz) pkg penne pasta, cook al denta
1/4 cup olive oil
2 (3.5 oz) links sweet Italian sausage
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes
1 (28 oz) can crushed tomatoes
3/4 tsp salt
2 tbsp vodka
1/2 cup heavy whipping cream
1/4 cup chopped parsley

While pasta is cooking, remove sausage from casing and saute, breaking up to crumble, until browned. Add garlic and red pepper and cook, stirring until garlic is golden brown. Add tomatoes and salt; bring to a boil and reduce heat to a simmer for 15 minutes. Add vodka and cream and bring to a boil. Reduce heat to low and add drained pasta, toss for 1 minute. Stir in parsley and serve. Serves 4
