CHICKEN FILLED MANICOTTI

3 (4 oz) boned, skinned chicken halves, diced
1 1/2 tsp curry powder and paprika
1/4 tsp salt and pepper
2 cloves garlic
1/4 tsp chicken bouillon granules
1/2 cup hot water
3 tbsp water
1 tsp oil
1/2 tsp hot sauce
1 1/2 cups sliced green onions
1 tbsp flour
1/2 tsp ground cumin
8 manicotti shells
8 oz plain yogurt
1 cup chopped tomatoes
Combine chicken, curry powder, paprika, salt, pepper, and garlic minced in a medium bowl and toss well. Cover and chill mixture 1 hour. Dissolve bouillon in hot water. Set aside. Coat a large skillet with vegetable spray and add oil and place over medium heat until hot. Add chicken mixture and cook 3 minutes, stirring constantly. Add green onions and cook 2 minutes. Stir in flour and cook 1 minutes. Gradually add bouillon mixture and cook 3 minutes or until thickened, stirring constantly. Stuff each shell with about 1/2 cup Chicken mixture. Arrange in a baking dish coated with spray. Cover and bake at 350 for 30 minutes. Combine yogurt, tomatoes, water, cumin and hot sauce in a bowl. Spoon over manicotti. Serve warm. Serves 4
