SOUTHWESTERN CORN BAKE

2 tbsp butter
1 small onion, chopped
1 red bell pepper, chopped
1 small can chopped green chilies
2 cups frozen corn, thawed
4 eggs
1 tsp chipotle powder
1/2 tsp salt
1 cup milk
1 cup half and half
1/3 cup flour
1/2 cup cheddar cheese, grated

Preheat oven to 325. - Melt butter in a skillet. Saute onion and pepper for 3 minutes over low heat. Add green chilies and corn and cook for 5 minutes. Spray a 2 quart baking dish with non stick cooking spray.

Spoon corn mixture in to casserole. Lightly beat eggs, chipotle and salt, add half and half milk, fold in flour. Pour egg mixture over vegetables and bake 30 minutes until egg mixture is set and lightly browned. Sprinkle with cheese. Let set and serve. Serves: 4-6
