1 head cauliflower
2 red onions, sliced very thinly
1 tbsp olive oil
1 tbsp herb or wine vinegar
1 tbsp fresh lemon juice
3 tbsp minced fresh parsley
2 cloves minced garlic
1 tsp fresh dill, minced or 1/2 tsp dry dill weed
1/2 tsp fresh thyme, minced or 1/4 tsp dried

Break the cauliflower into florets. Steam with the onions until just tender, about 5 minutes.

In a large bowl, whisk together the oil, vinegar, and lemon. Stir in the herbs. Chill for several hours, turning the vegetables in the marinate every so often.

NOTES: You can also cook the cauliflower in the microwave or in a pan with water to cover. Drain well and add to the raw onions. I love red onions, so I don’t steam them usually.
