1 large head cauliflower
1 onion, diced
2 tbsp fresh parsley, minced
1 clove garlic, minced
16 oz stewed tomatoes
1/2 tsp salt
1/4 tsp pepper
1/4 cup grated Parmesan cheese
Break cauliflower into small florets. Combine all the ingredients in a casserole dish. Cover and bake at 350 for about 40 minutes, or until tender.
