HERBED CAULIFLOWER BAKE

Category: Cauliflower

1 lb cauliflower florets
2 tbsp vegetable or chicken stock
1/4 cup chopped onions and mushrooms
1/2 cup chopped celery and stock
1 tsp Italian herb seasoning
1/2 cup plain breadcrumbs

Preheat oven to 350. Steam cauliflower; covered and steam 4-5 minutes or until just tender. Drain and keep warm. Put stock in a heavy skillet over medium heat. Saute chopped vegetables 4-5 minutes or until tender.

Stir in remaining ingredients except cauliflower and breadcrumbs. Season with salt and pepper. Simmer another 2 minutes. Stir in cauliflower. Transfer mixture to a lightly oiled baking dish. Top with breadcrumbs and bake 15 minutes. Serves 4
