CAULIFLOWER CHEESE PIE

Filling
1 tbsp olive oil
1 large onion, thinly sliced
2 clover garlic, finely chopped
Salt and pepper, to taste
1/2 tsp dried basil and thyme
1 medium heat cauliflower, coarsely chopped
1 cup grated cheddar cheese
2 eggs
1/4 cup milk
Paprika, garnish
Potato Crust
Butter, for greasing pan
2 cups grated raw potato
1/4 cup grated onion
1 egg, lightly beaten
1 tsp salt
1 tbsp flour
Olive oil, for brushing
Preheat oven to 400. Use butter to grease a shallow 9 inch pie plate. Combine crust ingredients and transfer mixture to a putter pan and pat down with a rubber spatula. Set pan in oven and bake for 30 minutes. Brush crust lightly with olive oil, return to oven and bake for 10 more minutes. Set pan aside. Turn oven down to 350.
Prepare filling: In a saute pan, heat olive oil until hot. Add first 5 ingredients. Saute over medium heat until onions are translucent. Stir in cauliflower and cook for 5 minutes more. Spread half of cheese on potato crust. Spoon sauteed vegetables on top, sprinkle with remaining cheese. In a bowl, beat together eggs and milk and pour over vegetables. Sprinkle with paprika and transfer to oven. Bake for 35 minutes or until custard is set and top is browned.
