BROWNIES WITH PEANUT BUTTER TOPPING

1 cup flour, sifted
3/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter
1 1/2 cups firmly packed light brown sugar
3 eggs
1 tsp vanilla
1 cup unsalted peanuts, chopped
1 (12 oz) pkg peanut butter chips

Preheat oven to 350. Sift, flour, cocoa, baking soda and salt onto wax paper. Beat butter, sugar, eggs and vanilla in a medium size bowl with electric mixer until fluffy. Stir in dry ingredients; beat until smooth. Fold in 1/2 cup of the chopped nuts. Pour into greased 13x9 inch baking pan. Bake for 30 minutes. Remove from oven to wire rack; sprinkle with peanut butter chips. Let stand about 5 minutes, then spread evenly with a small metal spatula. Sprinkle with remaining nuts, patting down gently. Cool; cut into bars. Makes 48 bar cookies.
