SPICY ITALIAN SAUSAGE, MOZZARELLA AND SWEET PEPPER TART

1 9-inch refrigerated pie crust
8 oz spicy Italian sausage (remove the casings if present)
1 (4 oz) jar roasted red pepper, drained and rinsed, cut into strips
1/2 small red onion, peeled and sliced thinly
Pinch dry basil, oregano and black pepper
1 cup grated Mozzarella or Provolone cheese
1/2 cup Parmesan or Asiago cheese, grated
3 eggs
1/3 cup whole milk

Preheat oven to 425. Prick bottom of crust with a fork 20 times and place in oven for 7 minutes. Remove from oven and pierce any bubbles that formed. Return to oven until crust is golden brown, about 11 minutes. Remove from oven and cool slightly.

Heat a large saute pan over medium heat and add sausage, crumbling well and allowing to cook through. Add peppers, onions, herbs, and pepper and cook onions through, stirring occasionally, about 10 minutes. Spoon sausage mixture into tart shell with a slotted spoon, allowing drippings to drain. Cover mixture with grated Mozzarella and Parmesan cheese.

Combines eggs and milk in a bowl with a whisk. Pour eggs over sausage/cheese mixture. Place tart in oven until egg mixture is set, about 27 minutes. Remove from oven and allow to cool.
