ZUCCHINI CASSEROLE

5 medium zucchini, grated
3 tbsp butter, melted
2 large eggs, lightly beaten
1 (3 oz) can French fried onions, crushed

In a medium bowl, combine zucchini with butter. Spoon mixture into a baking dish. Microwave on High for 5 minutes. Stir in eggs, and sprinkle with crushed onions evenly over top of casserole. Microwave for 15 minutes or until center is set. Let stand for 5 minutes before serving. Serves 6-8
