MANDARIN ORANGE AND PEAR SALAD WITH TOASTED PECAN VINAIGRETTE

10 cups mixed baby lettuces
6 mandarin oranges, peeled and segmented
2 pears, cored and cut into 1/4 inch thick slices
1/2 small red onion, thinly sliced

Toasted Pecan Vinaigrette
2 tbsp Dijon mustard
1 tbsp honey
1/4 cup olive oil and balsamic vinegar
1 cup toasted and chopped pecans

Salad: Combine in a large bowl and drizzle with vinaigrette, tossing gently and serve immediately.

Vinaigrette: Combine mustard and honey. Slowly whisk in oil in a slow stream to combine. Slowly add vinegar, whisking to combine. Stir in toasted pecans.
Serves 6-8
