GARLIC-AND-WINE GRILLED CHICKEN

3/4 cup dry white wine
1/2 cup butter -- melted
1/2 cup fresh parsley -- minced
6 cloves garlic -- minced
4 green onions -- chopped
2 tbsp lemon juice
1 tsp salt
1/2 tsp ground black pepper and paprika
4 lbs chicken pieces

Stir together first 9 ingredients, and reserve 1/2 cup. Pour remaining mixture into a large, heavy-duty zip-top plastic bag and add chicken. Seal and chill 4 hours, turning occasionally.

Remove chicken from marinade, discarding marinade. Prepare fire by piling charcoal or lava rocks on 1 side of grill, leaving other side empty. Place rack on grill. Arrange chicken over side with charcoal, and grill, covered with grill lid, 5 minutes on each side. Place chicken over empty side. Grill, covered with grill lid, 45 minutes, turning three times and basting often with reserved wine mixture. Serves 4
