GINGERBREAD PUMPKIN CRUMBLE

Filling
1 (15 oz) can pumpkin
1 can sweetened condensed milk
2 tbsp brown sugar
1 tsp cinnamon
1/2 tsp ginger and nutmeg
2 eggs

Topping
2 tbsp chopped crystallized ginger
1 pkg yellow cake mix
3/4 cup chopped walnuts or pecans
1/2 cup butter, melted

Whipped cream, garnish

Preheat oven to 350. Spray a 13x9 inch baking pan with cooking spray. In a bowl, combine filling ingredient until smooth and pour into pan.

In a bowl, combine toppings and sprinkle evenly over filling. Bake 40-50 minutes or until top is golden brown. Cool at least 30 minutes before serving. To serve, cut into squares and place on serving plates. Top each with whipped cream. Store in refrigerator.
