SOUR CREAM, BEEF AND NOODLE CASSEROLE

2 tbsp butter
1 lb lean ground beef
1 tbsp minced onion
1 clove garlic, minced
1/2 lb sliced mushrooms
1/4 cup dry red wine
3 tbsp lemon juice
2 cubes beef bouillon
1 cup water
2 cups uncooked noodles
Salt and pepper, to taste
1 cup sour cream
In a skillet, melt butter and brown beef with vegetables. Sauté until meat is no longer pink and onion is tender; stirring to break up meat. Add wine and next 3 ingredients. Simmer, uncovered, for 10 minutes. Add noodles, cover and simmer 15 minutes or until noodles are tender, adding more water if necessary. After liquid has evaporated, season with salt and pepper. Stir in sour cream and heat through. Do not allow it to come back to a boil.
