APPLE AND PECAN COOKIES

1 cup unsalted butter, lightly packed brown sugar and sugar
1 tsp vanilla extract
2 eggs
2 1/2 cups oatmeal
2 cups flour
1 tsp salt, baking powder and baking soda
4 oz milk chocolate
3 tart red apples, cored but not peeled, cut into 1/2” chunks
1 cup pecan halves
Preheat oven to 350. Cream butter and sugars. Add vanilla and eggs, mixing until lemony. Place oatmeal into food processor until powdered. In another bowl, sift together oatmeal and dry ingredients. Gradually add dry ingredients and beat on low until combined.
Place chocolate in food processor and process until powdered. Add chocolate, apples and pecans. Grease cookie sheets. Using a ice cream scoop, evenly place 9 cookies on sheet. Bake 10 minutes, more if desired. Cookies should be barely brown on edges and still very soft when removed from oven. Remove cookies to wire rack to cool. Cool cookie sheet each before continuing to bake each batch.
