1 cup butter
2 cups confectioners sugar and flour
4 tsp lemon juice and rind (about 2 lemons)
4 eggs, well beaten
2 cups sugar
1 tsp baking powder
4 tbsp flour
1 cup shredded coconut
Preheat oven to 350. Mix first 3 ingredients and spread out (batter will be stiff in a jelly-roll pan. Bake for 15 minutes, until pale tan. Mix remaining ingredients and pour over crust and bake for 25 minutes.
