CHOCOLATE STRAWBERRY CHEESECAKE

12 chocolate wafers, crumbled
1 ½ cups cream cheese, softened
1 cup sugar and cottage cheese
1/4 cup + 2 tbsp unsweetened cocoa
1/4 cup flour
1/4 cup raspberry liqueur
1 tsp vanilla extract
1 egg
1 ½ cups fresh strawberries, thinly sliced
1/4 cup frozen strawberries, thawed in light syrup
1 tbsp apple jelly

Coat bottom of an 8” springform pan with cooking spray. Sprinkle cookie crumbs evenly on bottom; set aside. In a food processor, add cream cheese and next 6 ingredients; process 1 minute or until smooth. Add egg; process until blended. Pour mixture into pan. Bake at 300 for 1 hour. Remove from oven ad let cook at room temperature. Cover and chill at least 8 hours.

Remove cake from pan; arrange strawberry slices over cheesecake. Place frozen strawberries and apple jelly in blender. Blend until smooth. Brush pureed strawberry mixture over sliced strawberries. Chill for 30 minutes.
