PUMPKIN CAKE ROLL

Roll
3 eggs, beaten
1 cup sugar
2/3 cup cooked pumpkin
3/4 cup flour
1 tsp baking soda
2 tsp cinnamon

Filling
1 (8 oz) pkg cream cheese, softened
1 cup confectioners sugar
4 tbsp butter
1/2 tsp vanilla

Preheat oven to 350. Prepare roll by beating eggs for 5 minutes. Add remaining ingredients and mix well. Pour into a well greased and flour a jelly-roll pan. Bake for 15 minutes. Turn cake out onto a long length towel which has been sprinkle with confectioners sugar. Roll cake into towel, beginning with narrow end. Let cool for 1/2 hour.

While cake is cooling, beat filling ingredients until smooth. Unroll cake and remove towel. Spread filling on cake and roll up again. Refrigerate until chilled. Slice and serve.
