COUNTRY PORK CHOPS WITH SAGE SMASHED POTATOES

3-4 potatoes, cut into 1” chunks
1 tbsp olive oil
1 large clove garlic, minced
4 (3/4” thick) pork chops
Salt and pepper, to taste
1 1/2 tsp butter
1/2 cup milk
1 tsp dried sage

In a saucepan, cook potatoes, covered, in 2” boiling water until tender, about 20 minutes.

While potatoes cook, mix olive oil and garlic and rub on both sides of pork chops. Coat a skillet with cooking spray. Add chops and fry until lightly browned, about 10 minutes on each side. Season with salt and pepper.

Drain potatoes, shake in pan over low heat about 1 minute to dry out the water. Remove from heat and smash potatoes with a fork, leaving them lumpy. Mix in butter, milk and sage. Mix over low heat for 2 minutes. Season with salt and pepper. Serve with chops.
