COUNTRY SKILLET HASH

1 1/2 cups diced smoked sausage or 4 pork chops 3/4 inch thick, diced
2 cloves garlic minced
1/4 tsp black and cayenne peppers
1/2 cup diced green bell pepper and chopped onion
1 stalk celery sliced
1 (14 1/2 oz) can diced potatoes, drained
1 (14 1/2 oz) can Italian-style diced tomatoes with basil, garlic & oregano, drained
1/2 tsp thyme
Cook sausage, bell pepper, onion, celery, garlic, black pepper and cayenne pepper in large skillet until onion is tender; drain.
Add potatoes, tomatoes and thyme; cook 3 to 5 minutes until heated through. Serve with eggs, if desired.
Note: If using pork chops, melt 2 tbsp butter in large skillet over medium heat. Add meat; cook, stirring occasionally, until no longer pink in the center.
