DEVILED SHRIMP

2 lbs medium to large raw shrimp, shelled and deveined
1 lemon, sliced thin
1 medium red onion, sliced thin
1 cup pitted black olives, well drained
2 tbsp chopped pimiento
1/4 cup vegetable oil
2 cloves garlic, minced
1 tbsp dry mustard and salt
1/2 cup lemon juice
1 tbsp red wine vinegar
1 bay leaf, crumbled
Dash ground red pepper
Chopped parsley, to taste
Bring 1 quart salted water to a boil, add the shrimp and cook for a scant 3 minutes. Drain at once, rinse in cold water, drain again and set aside.
In a bowl, combine next 4 ingredients; toss well. In a separate bowl, combine remaining ingredients and whisk to combine. Pour into the 1st bowl. Arrange the shrimp on a serving dish and pour the marinade over them. Cover and chill no longer than 3 hours. Serve with toothpick or bamboo skewers.
Note: Serve in a large bowl over cracked ice with long bamboo skewers or arrange the drained shrimp on a platter and put the reserved marinade in a small bowl for dipping.
