* ITALIAN BEEF ROLL-UPS*

1 1/2 to 2 lbs thinly sliced round steak
Salt and pepper, to taste
1 cup dry bread crumbs and parmesan cheese
1/4 cup finely chopped celery leaves
1 tsp dried parsley and basil
1/4 tsp oregano
2 tbsp vegetable oil
4 cups spaghetti sauce
Cooked pasta

Pound meat to tenderize and season with salt and pepper. Cut into 3-4 inch squares. Combine bread crumbs and next5 ingredients and then place a heaping spoonful of mixture on meat and roll. Secure with string. Roll meat in remaining crumb mixture.

In a skillet, heat oil over medium. Brown roll-ups on each side. Pour sauce over all and cover. Simmer for 1 1/2 hours or until meat is tender. Serve with pasta.

Variation: Before rolling up, mix together 1/2 cups grated carrots, 1/2 cup chopped zucchini and green or red bell pepper and 1/4 cup slice green onion and spoon this mixture over the bread crumb mixture and then roll up and tie together.

NOTE: Can be cook in the crock pot on low for 7-8 hours or on high for 3 1/2 – 4 hours.
