SPINACH PESTO SPREAD

Category: Spreads -- Cold

1 (10 oz) pkg chopped frozen spinach, thawed and squeezed dry
1 cup grated parmesan cheese
1/4 cup fresh basil leaves
2 cloves garlic
12 tbsp oil
2 tbsp lemon juice

Combine first 3 ingredients in a food process until blended. With machine running, gradually add oil, a little at a time through feed tube until a thick paste forms. Stir in juice and spinach. Store in refrigerator.

NOTE: Mixture can be combined with sour cream or mayonnaise for a vegetable dip.
