CREAMY SPINACH AND MUSHROOMS

1 tbsp oil and butter
1 (8 oz) pkg sliced mushrooms
1/2 cup thinly sliced scallions
1 (10 oz) pkg spinach, washed
1/4 tsp salt and pepper
1/4 cup sour cream

In a large skillet over high heat, heat oil and butter. Add mushrooms and scallions and cook for 2 minutes; stirring constantly. Add spinach and constantly toss until spinach wilts, about 2 minutes. Remove from heat and drain any excess liquid. Sir in remaining ingredients. Serves 4
