FIESTA CHICKEN PARTY ROLL

2 lbs chicken, cooked and chopped into small pieces to yield about 3 cups
2/3 cup thick salsa
3 tbsp chopped green onion, red bell pepper and cilantro
1/2 tsp chili powder
1 tsp lime juice
1/2 cup shredded taco or cheddar cheese
1/3 cup mayonnaise
1 cup chopped pecans, optional

Combine first 7 ingredients. Stir in cheese and mayonnaise, mixing thoroughly.

Using a large piece of foil, form chicken mixture into a 10 inch roll. Sprinkle with pecans, turning to cover all sides. Roll up foil and refrigerate overnight. To serve, remove foil and serve with crackers.
