BAKED CHICKEN CASSEROLE

1 1/2 cups chopped onion
2 cloves garlic, minced
2 tbsp olive oil
6 cups sliced mushrooms
1 1/2 lbs (about 4 1/2 cups) cooked chicken, shredded
1 (28 oz) can crushed tomatoes
2 tsp Italian seasoning
1/2 tsp black pepper
1 1/3 cups halved black olives
2 cups shredded Mozzarella, Provolone and Asiago cheese blend, proportioned according to taste

In a large skillet over medium heat, cook onions and garlic in olive oil for 2 minutes. Add mushrooms; cook until liquid evaporates, about 5 minutes. Add tomatoes and seasonings; cook 10 minutes longer. Remove from heat; cool slightly.

In a 13x9 inch baking dish, layer chicken, mushroom mixture, olives and cheese blend. Bake at 350 for 35 to 40 minutes, or until cheese is golden and casserole is bubbly. Let stand for 10 minutes before serving.
