HASH BROWN POTATO QUICHE

1 cup fresh or frozen hash brown potatoes, divided
3 eggs, slightly beaten
1 cup milk
1 1/2 cups shredded Swiss cheese
1/2 cup grated Parmesan cheese
2 tbsp chopped green onion
1/4 tsp pepper, paprika and salt
Cayenne pepper
Combine eggs and milk; mix in remaining ingredients, except potatoes. Fold in 3/4 cup potatoes; pour mixture into a lightly greased 9 inch pie pan. Sprinkle remaining 1/4 cup potatoes over top. Bake at 375 for 20 minutes, or until a knife inserted in center comes out clean. Let stand for 10 minutes; cut into wedges.
