FRIED FISH

20 – 24 oz cod fish fillets
1/2 cup flour with 1/2 tsp salt or seasoned salt added
2 eggs beaten with 2 tbsp milk
2 cups dried plain bread crumbs
1/2 tsp dried oregano, rubbed together between fingers before adding
1 tsp dried parsley, rubbed together between fingers before adding
1/4 tsp dried sweet basil, rubbed together between fingers before adding
1/4 cup shredded parmesan and Romano cheese
Oil for deep frying

Have seasoned flour in one plate, egg mixture into another plate and bread crumbs mixed together with seasonings and cheese. Dip fish fillets into the flour mixture. Then into the egg mixture and finally the bread crumb mixture. (If breadcrumbs do not stick to the fish, repeat the coating.) Heat oil in deep fryer to 350. Drop fillets in the oil an cook 2-3 minutes per side or until golden brown. Preheat the oven to 200. Drain cooked fish on paper towels to soak up oil. Keep the fish warm in the oven while cooking remaining fish.
