FLOUNDER AU GRATIN

1 1/2 lbs filets
2 tbsp chopped onions and celery
Salt and pepper
2 tbsp lemon juice and butter
Flour, for taste
1 cup milk
1/2 cup grated American cheese

Preheat oven to 450. Put filets in a shallow baking pan and sprinkle with onions, celery, salt and pepper. Add lemon juice and 2 tbsp water to pan. Bake for 10 minutes.

In a separate pan, melt butter and stir in flour. Gradually stir in milk and cook until thickens. Reserving 2 tbsp for garnish, add cheese and heat until melted. Pour over fish then sprinkle with remaining cheese on top. Bake for 10-15 minutes.
