HEARTY TORTELLINI SOUP

1/2 pkg 15-bean soup mix
2 quarts water or 32 oz chicken broth
1 large onion, coarsely chopped
1 (28 oz) can stewed tomatoes
1 large clove garlic, minced
8 oz box cheese-filled tortellini
1 (16 oz) bag frozen Italian vegetables or chopped 4 cups escarole
Salt, pepper, oregano and basil, to taste

Rinse beans thoroughly, cover with water, and soak overnight. Drain and place beans in a Dutch oven with water, onions, tomatoes, and garlic. Bring to a boil and simmer, covered, for 2 1/2 - 3 hours or until beans are tender. 30 minutes before serving, add tortellini and cook 15 minutes. Add vegetables and seasonings.
