HAMBURGER VEGETABLE BEEF SOUP (Crock Pot)

1 lb ground beef, browned and crumbled
Salt & pepper, to taste
1 large onion, chopped
1 clove garlic, minced
1 (15 oz) cans diced tomatoes with liquid
2 or 3 potatoes, peeled and diced
2 or 3 carrots, sliced
1 cup chopped celery, about 3 stalks
1 large can V-8 vegetable juice
1 or 2 cups water, depending on how thick you like your soup
Small bag frozen mixed vegetables
3 or 4 beef bouillon cubes
Salt & Pepper to taste

Brown and crumble ground beef with onion and garlic. Drain. Add to crock pot. Add remaining ingredients. Cover. Cook on low 8-10 hours or high 4-6 hours.
