4 cups flour
3 cups fresh peeled and chopped peaches
4 eggs, lightly beaten
2 cups sour cream
1 cup vegetable oil
1 tsp vanilla and almond extracts
2 tsp baking powder
1 tsp baking soda
Combine dry ingredients. Add peaches, toss gently. Combine eggs, sour cream, oil and extracts in a bowl, mixing well. Stir into dry ingredients just until moistened. Spoon muffin batter into greased or paper-lined muffin pan, filling 2/3rds full. Bake at 400 for 25-30 minutes or until golden. Remove from pan and cool on a wire rack.
